The short version
Ceremonial matcha from Shizuoka, Japan. One ingredient: green tea. Whisked, not steeped. Has caffeine, and it lands slower and lasts longer than coffee. 1 oz tin, about 28 servings.
Ceremonial matcha, stone ground green tea powder, whisked rather than steeped. Creamy and buttery with a deep savory umami and a gentle natural sweetness, and a color that looks like it should be a paint chip. Sourced from the Matsushita Tea Garden in Kakegawa City, Shizuoka, from Saemidori and Tsuyuhikari leaf harvested in spring.
The ritual is the point. Sift, add water, whisk in a W until it foams. It takes ninety seconds you cannot delegate, which is exactly why it works. Nobody has ever charted during it.
Preparation: 1 g per 8 oz, water at 175°F. Not boiling, because boiling water turns good matcha bitter. A bamboo whisk helps; a small regular whisk works.
